OUR grades


Of the three main grades of beef that you can get, we only offer the BEST of the TOP TWO GRADES.  


Our PLATINUM LEVEL is graded USDA Prime. Prime beef is distinctively superior. The beef is tender, juicy, and has a buttery richness. It has a very fine texture and has the highest degree of IMF (Intermuscular Fat/Marbling).  Only 2% of the beef produced in the United States is graded as prime.  This will be a higher, better, tastier grade of beef than in most restaurants.


Our Gold Standard is graded the Upper 2/3 quality of USDA Choice. We only sell the best two-thirds of the cuts. Choice is the 2nd highest grade of beef. Choice beef has a little less IMF and is still superior to most cuts sold at fine restaurants and grocery stores.
